Bananas simply became the focus because they are one of the most common smoothie ingredients. Like many viral nutrition stories, the science was real. The headline just went much further than the evidence.

Polyphenol oxidase is the same enzyme that turns sliced apples and bananas brown after they're cut, and it works significantly less efficiently in an acidic environment. That's why squeezing lemon juice over apple slices keeps them from turning brown, and the same principle applies to a smoothie. A squeeze of fresh lemon or lime juice can help inhibit PPO activity, potentially preserving more of the flavan-3-ols found in blueberries while also adding vitamin C and fresh citrus flavor.2

If maximizing blueberry flavan-3-ol absorption is your goal, you have a few simple options:

Your stomach stores food. Your small intestine digests and absorbs nutrients. Your colon is where most microbial fermentation is supposed to occur.
